Jalapeno Popper Fritter

2 c cooked fresh cut or canned corn (drained)

1/2 c all purpose flour

1 egg

1/2 c shredded cheddar cheese

1/2 c cream cheese (softened)

2 or more Jalapeno Peppers, diced

2 slices cooked bacon, crumbled

1 tsp paprika

1 tsp ground cumin

2 green onions, sliced

1 handfull cilantro, chopped

1 lime, zest and Juice

3 TBSP TTOV's Chipotle EVOO

Mix corn, flour, egg, 1 tsp Chipotle EVOO, cheddar, cream cheese, jalapenos, bacon, paprika, cumin, green onions, cilantro & lime juice in a bowl (add a little more flour if they are not forming into patties well). Heat 2 tbsp Chipotle olive oil in a pan over medium heat. Using a cookie scoop, form into 1/4 cup patties and cook until golden brown on both sides, about 2-4 minutes per side.

Avacado Cream Sauce

2 ripe avacados

1/4 c sour cream

3 tbsp Taste The Olive's Persian Lime EVOO

1 tbsp Taste The Olive's Poppin Jalapeno White Balsamic

Blend together in food processor or blender and serve with fritters.
