Wild Mushroom & Sage -Chive Steaks
Four 3/4 to 1 inch thick sirloin steaks, patted dry
4 cloves garlic - smashed & grated
3-4 TBSP snipped or chopped fresh chives
8 oz Gorgonzola or a herbed goat cheese
Salt & ground pepper to taste
In a bowl, combine TTOV's Wild Mushroom & Sage EVOO, garlic and the chives. Season the steaks with salt and pepper, then coat with the oil mixture.
Heat a large skillet over high heat.
Add 2 steaks and cook for 5 minutes on each side (for Medium-Rare) or 8 minutes (Medium).
Transfer to a plate and repeat steps for the remaining steaks.
Top the steaks with the cheese, tent with aluminum foil and let stand for 5 minutes.
Serve with mashed potatoes, greens and warm crusty bread.
