Mediterranean Pasta Salad
12oz pasta (Penne)
1 cup grape tomatoes, halved
1 cup cucumbers, sliced & quartered
¼ cup red onions, thinly sliced
1 cup greens (spinach or arugula)
½ cup green olives, sliced
½ cup kalamata or black olives, sliced
½ cup feta, crumbled
Salt & pepper to taste
Dressing:
½ cup TTOV’s Tuscan Herb Olive Oil
¼ cup TTOV’s Organic Red Wine Vinegar
2 tsp Dijon mustard
1 tsp Garlic, minced
Directions: Cook pasta per directions on package. Drain pasta and add to a medium size bowl. Add remaining ingredients to pasta. In a separate bowl, mix the Dressing ingredients with a whisk until combined. Pour dressing over pasta. Mix thoroughly and enjoy!
