Peach Flatbread

Everyone who knows me, knows that in season peaches are the way to my heart. That being said, anytime my friends or family stop at the farmers market they pick some up for me. This has led to an abundance of peaches in my kitchen and I needed to come up with a different way to use them. I happened across a recipe for a Peach Flatbread and knew I had to try it. After I did, I told everyone to keep the peaches coming. -Jess


Flatbread (store bought, or homemade) 2 tbsp. TTOV's Basil Olive Oil 1 peach (sliced thin) 1/4 red onion (sliced thin) Brie Cheese (or blue! It really comes down to preference here, any soft cheese will do.) Fresh Basil Salt and Pepper to taste 1/2 cup of TTOV's Traditional 18 Year Aged Balsamic

1. Preheat oven to 400 degrees. 2. Combine TTOV's Basil Olive Oil, Peaches, and a splash of TTOV's Traditional 18 Year Aged Balsamic in a pan, and cook until caramelized, about 5 minutes. 3. In a small sauce pan, add the remaining Aged Balsamic and reduce over medium-low heat. You want it to be the same consistency of honey, and coat the back of a spoon. This usually takes around 10 minutes, stirring occasionally. 4. Top flatbread with peach mixture and then add your cheese of choice. 5. Place it in the oven, and cook for about 10 minutes. Once finished, add your fresh basil, and Traditional Balsamic reduction. If you have any reduction left over, it will keep in the refrigerator for up to 3 months.
