Tuscan Chicken with Parmesan Cream Sauce

Yesterday, we felt the need for comfort food, and this Tuscan Chicken served in a parmesan cream sauce provided. This chicken recipe is full of flavor. The acidity from the lemon juice cut through the richness of the cream giving way to a perfect bite. -Jess


2 chicken breasts (sliced into thin cutlets) 1/4 cup of AP flour salt and pepper to taste (I used about 1/2 a teaspoon of each) 2 tablespoons of TTOV's Tuscan Herb EVOO 2 tablespoons of TTOV's Butter EVOO 3 garlic cloves (minced or sliced thinly) 1 cup of chicken broth 1 cup of heavy cream 1/2 cup of freshly grated parmesan cheese 1 teaspoon of red pepper flakes (adjust to your preferences on spice) 1 teaspoon of Italian seasoning 1/4 cup sundried tomatoes 1 tablespoon fresh basil (chopped) 1 lemon (sliced into wedges)

For Pasta 6 oz packaged egg noodles (half of a bag) 2 tablespoons TTOV's Butter EVOO 2 garlic cloves (minced)


Directions:

1. Season chicken cutlets with salt and pepper, then dredge in the flour and shake off the excess. 2. Add TTOV's Tuscan Herb and TTOV's Butter Olive Oil to a large skillet on medium heat. 3. Add chicken to the pan, and cook until it reaches 165 degrees and is golden brown, about 3-5 minutes per side depending on thickness. Transfer to a plate, cover, and set aside. 4. At this point, start boiling water preparing to cook egg noodles, following package instructions. 5. Add minced garlic to pan and sauté until fragrant, careful not to let it burn. Deglaze pan with chicken broth, and adjust heat to medium low. 6. Add heavy cream, parmesan cheese and spices to pan, allow to simmer for a few moments. 7. Add sundried tomatoes and return chicken to the pan with sauce, allow to simmer about 4 or 5 minutes until sauce has thickened. 8. When egg noodles are finished, drain and return to burner, add TTOV's Butter EVOO, and extra minced garlic, stir to combine, (about 20 seconds) then remove from burner and set aside. 9. Add noodles to your plate, topped by the chicken and sauce. Finish with freshly chopped basil and lemon on the side for a fresh squeeze right before eating. Enjoy!
